Why "Bruno's Italian Taste"?
My name is Fabio Brunocilla, I was born in Cosenza (Calabria, Southern Italy). I grew up in a very large and close-knit family. Since I was a kid,
I loved watching and helping my mother and aunts cook for the endless
Sunday and holiday lunches. I
actively participated in the preparations, in particular, I liked to put
my "hands in the dough" by preparing homemade pasta, bread, and
desserts. Studies and work took me away from that professional context, although it remained my greatest dream.
In my
experience of living and working in Padua, friends and colleagues called
me "Bruno" (in Northern Italy, among friends, they use to call each other with a
contraction of the last name). In that period I decided to leave the computer and the office desk to dedicate myself to the whisk and the oven. What was once a hobby has become my profession.
I threw myself into it headlong, studying, learning, and dedicating much of my time to my passion. I enrolled in the hotel school and had little experience in the kitchen as an assistant chef, I followed a professional Pizza Chef course at "Scuola Italiana Pizza" which paved the way for my current profession. I became passionate about studying the various leavening techniques and I followed in-depth courses held by master bakers, the most important of which was with master Piergiorgio Giorilli.
And, as always happens when you work with love and passion, the recognition and rewards were not long in arriving.
Even the experiments with modern pastry making, which I initially prepared for family parties, had great success, and with word of mouth alone, I created Bruno's Cakes, for loyal customers that I was unable to expand not due to lack of requests but because my " laboratory” was my home kitchen.
Then, in 2023, with the help, support and stubbornness of my beloved wife Marcella, I had the opportunity to take the big step: bringing our "Italian Taste" to the USA.
